Schwarze Trüffel (tuber melanosporum): Er riecht weniger, Wintertrüffel ist aber intensiv im Geschmack. Perigord-Trüffel haben eine schwarze Außenhaut, Sommertrüffel die aus kleinen pyramidenartigen Höckern besteht. Als besonders wertvoll wird der schwarze Trüffel oder auch Perigord-Trüffel angesehen. Länger als weiße Trüffeln bleiben schwarze Trüffeln bis zu 14 Tagen frisch.
