Schwarze Trüffel (tuber melanosporum): Er riecht weniger, Sommertrüffel ist aber intensiv im Geschmack. Perigord-Qualität Getrocknete Trüffel Produkte haben eine schwarze Außenhaut, die aus kleinen pyramidenartigen Höckern besteht. Als besonders wertvoll wird der schwarze Trüffel oder auch Perigord-frische trüffel preis angesehen. Länger als weiße Trüffeln bleiben schwarze Trüffeln bis zu 14 Tagen frisch.
